Egg Bhujia - Try it!

  • I know the problem of adjusting for eggs - but this is a favourite for Saranya, and she doesn't get raises for eggs. So here goes:
    1. heat 2 tsp oil in a pan. Also if you could get some mildly hot curry powder - chana masala powder will do.
    2. crush 2 cloves garlic, dice into very small pieces some ginger, and julienne onion, tomatoes, and if you want, bell-peppers
    3. beat the eggs (as many as you think you'll need to feed) well.
    4. add the garlic, ginger, and onion to the oil, stir fry until slightly browned.
    5. add the tomatoes, and the bell-peppers, wait for them to lose water.
    6. now add the eggs, and stir them in well. Add salt and pepper to taste, try a tsp of curry powder too.
    7. wait until well-cooked, and dish out hot - goes best with chapatis / tandoori rotis.

  • Sounds very similar to an omelet that I occasionally make.  Never thought to add curry to it tho.  That sounds yummy!

  • I was thinking the same thing, Michelle.  Zephyr's only just coming around to curry in things and he loves eggs so this might be a nice change from the usual.

  • This dish is a basic one - you can enhance it by adding to it diced chicken, potatoes, fish, anything else - and it makes for very good pizza topping as well.

  • Mmm, this does sound good!  I LOVE Indian food and dishes with curry, but I never thought to cook eggs with it.  I think I'll have to try this out....thanks for the idea!

  • Sure: The 'bh' sound you will probably not be able to produce exactly because this is a socio-cultural linguistic usage, and and involves a plosive sound, since you're not used to Indian pronunciation. So, the nearest is: 'boo-jee-ah'.
    Our linuistics teacher told us Europeans can't enunciate three sounds: the 'bh', the '{He has a name}  ', and the 'jh.' Please don't take it personally!
    'Egg boojeeah!'
