Recipe: Poulet sauté a la Portugaise
Chicken with Mushrooms, Tomatoes, and Olives

Ingredients:
4 Tablespoons butter
1 chicken, cut into 8 serving pieces
2 onions, diced
1/3 cup all purpose flour
2 garlic cloves, finely chopped
2 shallots, finely chopped
2 cups beef stock
1 cup dry white wine
Bouquet Garni (1/4 tsp dried thyme or 2-3 sprigs fresh; 4-5 sprigs parsley, 1 bay leaf)
1 Tablespoon tomato paste
½ teaspoon salt
¼ teaspoon pepper
3 ounces green olives
1 ½ Tablespoons vegetable oil
¾ pound mushrooms, quartered
2 pounds tomatoes, peeled, seeded, and quartered
3 ounces black olives
3 sprigs parsley, chopped, for garnish


Instructions:
1.   In a flameproof casserole, heat the butter over high heat. Add the chicken and brown well on both sides. Add the onions, reduce the heat to medium-high, and cook until golden.
2.   Stir the flour into the butter. Reduce the heat to medium and cook, stirring until flour is light brown.
3.   Add the garlic, shallots, stock, wine, bouquet garni, tomato paste, salt, and pepper. Stir gently with a wooden spoon.
4.   Cover, reduce heat to medium-low, and simmer for about 25 to 30 minutes. Skim the surface for fat and remove bouquet garni. At this point, the dish may be refrigerated for up to 2 days.
5.   Place the green olives in a saucepan and cover with cold water. Bring to a boil, drain, and rinse with cold water.
6.    In a 12-inch skillet, heat the oil over high heat. Add the mushrooms and sauté until browned. Season to taste with salt and pepper.
7.   Add the green olives, mushrooms, tomatoes, and black olives to the chicken. Simmer for 5 minutes.
8.   To Serve: Transfer to a hot serving dish and sprinkle with chopped parsley.

Lauri wondered what that meant!  We just used a dutch oven size pot.

Also, the recipe doesn't say so, but it helps to remove the chicken from the pot after browning, before adding the onions.
